Lunch That Quietly Becomes Dinner
The finest East End lunch is measured by how completely the afternoon loses its schedule. One bottle becomes two, the harbor changes color, someone cancels the evening reservation, and suddenly the table everyone planned to leave is exactly where the night begins.

The setting helps. A table near water performs differently from a table that merely advertises a water view. There should be movement: boats arriving, glasses catching light, a breeze requiring one person to rescue the menu. Service must understand pacing.
Order for continuity rather than spectacle. Start with oysters, crudo or something bright enough to make the first glass feel deserved. Follow with fish, vegetables and one plate the table did not need but will finish. French fries are not negotiable.
The reservation is a beginning, not a deadline.
When lunch becomes dinner, do not overmanage the transition. Add a sweater. Order another bottle. Let the light change. Long Island does this kind of day exceptionally well because distance creates permission. The calendar already surrendered. The only remaining question is whether the table deserves another round.
